75% Chardonnay - 15% Pinot Noir - 10% Pinot Blanc - Disgorgement autumn 2019. The base wines of the Cuvée Prestige are the result of a careful selection of the grapes and a skilful vinification conducted in full compliance with the Ca 'del Bosco method. The grapes, harvested by hand in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from exclusive "acini spa". A particular bunch washing and whirlpool system, through three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the musts of the base wines ferment in heat-conditioned steel tanks and remain there until the following March. Seven further months of aging are necessary for the wine to become clear, mature and bring out the character of the vineyards of origin. Subsequently the wines are expertly assembled with noble reserve wines of the best vintages (from 20 to 30%) in the "magic rite" of the creation of the cuvée. This particular technique gives the Cuvée Prestige a strong personality. The essence of Ca 'del Bosco-style Franciacorta. Only after an average aging on the lees for 25 months can this Franciacorta express all its richness and identity. The dégorgement takes place in the absence of oxygen, using a system unique in the world, conceived and patented by Ca 'del Bosco.
This avoids oxidative shocks and further additions of sulphites. It makes our Franciacorta purer, more pleasant and longer lasting. Finally, each packaged bottle is uniquely marked, to ensure traceability. Pale yellow in color with golden reflections, it has a fine, abundant and persistent perlage, a bouquet of yellow-fleshed fruit, candied citrus fruits, almonds and bread crust, on the palate soft and creamy, pleasantly fresh and acidic.
